Maynard James Keenan opens Southwest chicken eatery in Cottonwood

🍗 Maynard James Keenan, owner of The Merkin Vineyards and Caduceus Cellars, opens a new restaurant concept – Four 8 Fried Chicken by Four 8 Wineworks – today in Old Town Cottonwood.

It takes over the space formerly occupied by Merkin Vineyards Tasting Room & Osteria, which recently relocated.

What’s on the menu?

Keenan, frontman for the rock bands Tool and A Perfect Circle, and chef Monty Frost created a Southwestern twist on hot chicken that pairs with sparkling Arizona meads, ciders, and wines.

Also on the menu: Keenan’s father’s recipe for green beans and bacon, green chile mac and cheese, fennel slaw, potato salad, hushpuppies, and jalapeño cornbread.
