🍣 Simply Shroom, a cafe specializing in mushroom coffees and lattes, has opened on the southeast corner of Fifth Avenue and Marshall Way in Old Town Scottsdale.
- In a market segment dominated by masculine themes, owners Crystal Carroll and Sharmi Albrechtsen-Kneller say their concept is ‘‘built on the health priorities of women.’’
What’s on the menu? A variety of coffee drinks, cold brews, blended teas, boba teas, and spritzers. All include a micro-scoop of tasteless mushroom blend as a vitamin boost.
- Food options include egg bites, avocado toast, salads, wraps, sandwiches, and baked goods.
The plan: Carroll and Albrechtsen-Kneller hope to expand their concept by seeking franchisees in Las Vegas, Los Angeles, San Francisco, and Denver.
Open: 7 a.m.-2 p.m. Monday-Thursday, 7 a.m.-7 p.m. Friday-Saturday, and 8 a.m.-3 p.m. Sunday. (Soft-opening hours may vary.)
