👨🌾 Steadfast Diner has opened in the vintage red-and-white Valentine diner formerly home to The Handlebar Diner at the master-planned Eastmark community in southeast Mesa.
The restaurant, located on the north side of Ray halfway between Ellsworth and Signal Butte, is a joint effort by one-acre Steadfast Farm owners Erich and Yvonne Schultz and James Beard Award-nominated chef Derek Christensen (formerly of Bacanora and Wren Sudhalle).
Highlights of the modern farm-to-table menu include a salad with Steadfast Farms mixed greens ($14); a Capital Farms double smashed burger ($15); a pasture-raised chicken breast sandwich ($15); and Amadio Ranch pies.
Cocktails, beers, and wines are available.
Hours are 11 a.m.-9 p.m. daily.
