Liquor Pig, a much-anticipated gastropub from industry veterans Scott Casey and Steve ‘‘Chops’’ Smith, officially opens at 4 p.m. Friday in Old Town Scottsdale.
It takes over the small brick building near the southeast corner of Scottsdale and Fourth Avenue perhaps most notable as Mediterranean-Southwest hybrid Medizona from 2007-2009.
Mighlights of Liquor Pig’s menu include a Libertine board with roasted bone marrow, Linz beef tartare, and foie gras ganache ($47), shakshouka with merguez lamb meatballs ($24), and milk-braised veal pappardelle ($21).
Cocktails include the Spam Folder made with whiskey, rum, pineapple amaro, cinnamon demerara, lime, coconut cordial, and, yes, Spam – all served in a Spam can ($19).
Open 4 p.m.-2 a.m. daily.
