New American eclectic restaurant Sparrow lands in Peoria

🐦‍⬛ Peoria just landed a stylish new dining destination. Sparrow, the latest concept from Valley-based Sky Restaurant Concepts, is now open at The Trailhead, a 40-acre mixed-use development at 83rd Avenue and Happy Valley.

Led by co-owner and creative director Emily Ganem, Sparrow celebrates the melting pot of American cuisine with a menu that balances comfort and creativity.

Guests will find oysters – served raw or grilled with miso butter – five hearty salads, and entrees that range from short rib ragu tagliatelle with wild mushrooms to a 10-ounce charbroiled prime filet mignon. For a showstopper, try the seafood hot pot for two (pictured), or explore seasonal fish selections.

Executive chef Schuyler Estes describes the menu as a tribute to “bold flavors, intentional techniques, and the stories behind each ingredient.” That sense of craft extends to Sparrow’s cocktail program, designed by Highball Cocktail Bar’s inventive duo, Libby Lingua and Mitch Lyons.

The 4,300-square-foot space matches the ambition of the menu with an open-concept dining room, a full bar and lounge seating, and a spacious covered patio perfect for Arizona evenings.
