Mesa recording studio launches Diamond Don’s restaurant

🎤 The father-and-son team behind the Saltmine Studio Oasis held a grand opening Tuesday for Diamond Don’s, their recently launched restaurant adjacent to the recording studio on the northwest corner of Macdonald and First Avenue in downtown Mesa.

The restaurant was developed by Don Salter, who founded the internationally renowned studio in 1984, and his son and chief producer, Velvet Cash.

In an extended soft opening that began over the summer, Diamond Don’s has been offering ‘‘upscale fast food’’ like Philly cheesesteaks, smash burgers, 12-inch artisan pizzas, wagyu hot dogs, and velvet butter cake. Angus and wagyu steak bites on skewers are coming to the menu soon.

By this spring, the owners plan to introduce wagyu filets and other premium cuts served in a more “upscale-casual” style similar to a traditional steakhouse but without the formal, white-tablecloth vibe.

The restaurant, which has a full bar and is open from 5 p.m.-1 a.m. Wednesday through Sunday, will host a rotating lineup of live performances spanning hip-hop, country, EDM, rock, and jazz.
