
🥩 The Scottsdale Quarter dining scene is about to get a shake-up.
Etta – the Italian restaurant that’s been operating at the high-profile corner space since 2022 – served its final guests Saturday.
In its place comes The Guest House, a chic, nightlife-leaning steakhouse concept from RDM Hospitality that’s set to debut Friday, marking the brand’s third location.
RDM acquired Etta in April 2024 after its run in Scottsdale included multiple ownership shifts and legal turbulence tied to its former parent group, which also operated Maple & Ash.
Though the restaurant remained popular with Valley diners, RDM founder Raj Kumar says the space “came with baggage” and needed a clean reset, although the staff was retained for the transition.
The Guest House was created by Kumar, who launched the first outpost in Austin, Texas, in 2024 with a read on post-pandemic dining habits: diners may be going out more often, but they still want atmosphere.
The Scottsdale location will feature the brand’s indulgent, presentation-driven menu, which leans into tableside moments (pictured) and luxe steakhouse showpieces.
Starters range from wagyu served tableside with seaweed salt and spicy ponzu, steak tartare on truffle toast, and a dramatic “flaming” burrata finished with Calabrian chili, to lighter plates like Taylor Bay scallop ceviche and charred Moroccan beets with pistachio dukkah.
Seafood plays a big role, including oysters, shrimp cocktail, hamachi crudo, caviar service, and the Ocean’s Eleven seafood plateau, offered chilled or warm.
A “Butcher’s Best” section anchors the menu with a 36-ounce prime tomahawk, a 40-day dry-aged ribeye, and a Mishima Reserve wagyu New York strip, alongside an over-the-top “Surf, Turf & Earth” pairing A5 wagyu, diver scallop, and fresh truffle.
