🍕 Pizzicata has opened a new location near the southwest corner of the Loop 101 and 59th Avenue in Glendale, bringing its distinctive Italian concept – and its signature Pinsa Romana – to the West Valley.
The restaurant traces its roots to founders Federico Venturini and Viola Tagliaferri, who moved to the Phoenix metro area from Gualdo Tadino, Italy, in 2018 with a goal of opening an authentic Italian restaurant. They debuted Pizzicata in Carefree in 2019.
A second Pizzicata opened in northeast Mesa in 2023.
Unlike traditional pizzerias, Pizzicata focuses on Pinsa Romana, a style the couple introduced to Arizona. The dough is made from a blend of non-GMO wheat, rice, and soy flours and fermented for up to 72 hours, resulting in a crust that’s lighter, crisp on the outside, airy inside, and easier to digest than standard pizza.
Popular pinsas include the Vegetariana with roasted vegetables and fresh mozzarella; the Capricciosa topped with Italian sausage, ham, mushrooms, artichokes, and olives; and the Alfredo, finished with gorgonzola, chicken, and creamy sauce.
The menu also offers traditional hand-tossed pizzas, and extends into classic Italian comfort dishes such as spaghetti and meatballs, fettuccine carbonara, and lasagna al forno, along with cocktails and wine.
