Ex-P.F. Chang’s chef launches Scottsdale dumpling house

🥟 Ni Hao Bao Dumpling House, which soft-opened over the holidays, holds its public grand opening Friday at Mercado del Rancho on the southeast corner of Shea Boulevard and 92nd Street in central Scottsdale.

Founded by Arizona natives and longtime friends Darrell Ngo and Arin Finger, Ni Hao Bao aims to capture the feel of an Asian street market while keeping the experience approachable and neighborhood-friendly.

The 1,500-square-foot fast-casual restaurant focuses on made-to-order dishes, including hand-pinched dumplings available in both meat and vegetarian options. The menu also features steamed and crispy bao buns, wontons, and other small plates, alongside boba drinks.

Ngo brings extensive restaurant experience to the project, having spent 21 years with P.F. Chang’s, where he rose from operations into the corporate culinary team. As Senior Culinary Innovation Chef, he led global menu development, helped open eight locations, and created more than 250 recipes.

Finger, a former visual effects and animation producer in motion pictures, helped shape the restaurant’s airy, open-kitchen setting.
