
🥩 Pistoleros Parrilla, a two-story Mexican steakhouse from the owners of popular Boondocks Patio & Grill, has opened its doors on the southeast corner of Stetson and Civic Center Plaza in Old Town Scottsdale.
The 5,000-square-foot restaurant with an open mesquite grill comes from brothers Luke and Jake Kory, Nogales natives who draw on northern Mexican grilling traditions.
Before the grill takes over, the menu opens with Sonoran-leaning appetizers designed for the table: elote asado finished with escabeche aioli and cotija, queso fundido with optional chorizo or mushrooms, crispy mochomos made from braised beef, and chile güero shrimp toritos wrapped in bacon.
The parrilla (‘‘grill’’) lineup ranges from a share-worthy 40-ounce Vaquero Tomahawk ribeye to classic cuts like a Black Angus ribeye, bone-in New York strip, filet mignon, and richly marbled arrachera skirt steak.
All steaks are grilled over mesquite, sliced to order, and served with warm flour or corn tortillas, house salsa, and optional surf-and-turf shrimp brochetas.
Seafood plays a supporting role with aguachile verde, shrimp ceviche, tuna crudo, and a Sonoran-style shrimp cocktail.
Oven-finished dishes like Nogales-style entomatadas, beer-braised short ribs, and mahi-mahi round out the menu, while classic sides – frijoles charros, arroz mexicano, rajas con crema, and mesquite-grilled vegetables – complete the spread.
