Gilbert’s own went to France – now he’s bringing France home

🥐 Downtown Gilbert gets a whole lot more magnifique today.

French-style bakery Sablé Boulangerie opens its doors at 8 a.m. in a small building with walk-up windows next to Liberty Market and just east of the iconic water tower.

Executive chef and Gilbert native William Porter left Arizona to study pastries in the south of France, sharpened his craft in Parisian boutiques, and went on to cook at the legendary Burj Al Arab in Dubai.

Now he’s home, and he brought everything he learned with him.

The menu features a baguette de tradition made with French T65 flour, Tourte de Seigle (rye bread), Pain Suisse, and croissants — all made the old-school way.

Real butter, authentic flour, and time. No shortcuts, no compromises.

The crown jewel? The Pain Au Chocolat, filled with an extra bittersweet chocolate bar meant to be paired with a latte or cappuccino.

Open 7 a.m. to 2 p.m. Wednesday through Sunday.
