Schiacciata happens: Paper Bag debuts in midtown Phoenix

🥪 Florence called. Midtown Phoenix picked up.

Paper Bag quietly opened its doors last Friday on the southeast corner of Missouri and 12th Street, and it’s exactly the kind of place that makes you feel guilty about your sad desk lunch.

Inspired by the sandwich shops of Florence, the concept is refreshingly simple: a small, rotating menu of handcrafted sandwiches built on fresh-baked Schiacciata – a pillowy, olive oil-kissed Italian flatbread – made every morning and served until they sell out.

And sell out they will.

The menu is tight but loaded with personality. The Starting QB stacks prosciutto, fresh mozzarella, sun-dried tomatoes, and pesto. The Lunch Money layers roast beef, provolone, and horseradish crema with caramelized onions.

Vegetarians aren’t forgotten – the Field Day hits with mozzarella, tomato, pesto, and a parmesan crisp. For the truly hungry, the Group Project is a full Italian-deli pile-up.

Open 10:30 a.m.-4 p.m. Tuesday-Saturday and 10:30 a.m.-3 p.m. Sunday.
