
🥩 Barrett Rinzler isn’t slowing down. The Scottsdale restaurateur behind local staples like Cold Beer & Cheeseburgers, Bourbon & Bones Chophouse, and Nook Kitchen is breaking ground on two new locations of his latest concept: an Italian steakhouse called Bistecca & Bones.
Think of it as the Italian cousin to Bourbon & Bones. The menu will go beyond steaks into pasta and seafood, with showy touches like a tableside Caesar salad and a flaming Bistecca Fiorentina. Rinzler describes the aesthetic as sports-car-and-designer-clothes Italian glamour – polished but still walk-in-off-the-street friendly.
Bistecca & Bones
The first Bistecca & Bones opens in early 2027 at CityNorth in north Phoenix. The second will land at The Sydney, the massive $100 million entertainment and retail development going up on Salt River Pima-Maricopa land near 90th Street and the Loop 101.
(The Sydney is a project I’ve been tracking closely, having already covered the pending arrivals of Atashi Yokocho, City Winery, The Rustic, and Reverb by Hard Rock.)
That second Bistecca & Bones will anchor the ground floor of a two-story, roughly 6,800-square-foot building.
Old Town Ski Lodge
Upstairs at The Sydney building, Square One is going big with a second, much larger outpost of its Old Town Ski Lodge concept – currently tucked above Wasted Grain in Old Town Scottsdale.
The Sydney version balloons to 2,500 square feet with a wraparound patio and an immersive alpine theme, complete with repurposed gondolas and ski-lift chairs turned into seating. The showstopper: a walk-in-freezer bar built entirely out of ice, from the seats to the tables to the bar itself.
Square One expects to take possession of the space by summer 2027, with both concepts targeted to open by late 2027 or early 2028, putting them on a similar timeline to The Sydney’s other big-name tenants.
