Kuza, Clive Collective’s globally inspired Asian dining concept, has opened in North Scottsdale, taking over the space Chauncey Social vacated near Scottsdale Road and the Loop 101. It’s the hospitality group’s sixth restaurant and third concept along a short stretch of Scottsdale Road, joining The Americano and Tell Your Friends.
Notably, the kitchen isn’t being run by the chef originally attached to the project. Beau MacMillan, who developed Kuza’s concept before stepping away from Clive Collective earlier this year, has been replaced by executive chef Erik Davila, who balances Japanese tradition with modern technique and global influences.
Centered on an open robata grill and raw bar, the menu splits into raw starters, binchōtan-grilled robata, sushi, and shareable plates. Standouts include Chutoro Tataki with yuzu kosho aioli, A5 Wagyu Tartare with ossetra caviar, and Spicy Tuna Crispy Rice.
Off the grill, highlights include Chicken Negima with house tare, New Caledonia Prawns in a red kosho-yuzu glaze, and Spanish Octopus with gochujang harissa honey.
The sushi program draws on fish flown in from Tokyo’s Toyosu Market, including a Bluefin Tuna Tasting spanning akami to otoro. For the table, there’s a 40-ounce Prime Porterhouse, Wagyu Fried Rice, and King Crab Fried Rice.
The drink list matches the food’s East-meets-everywhere approach: a rose-infused Lychee Collins, a wasabi-spiked Sabi-Wabi, and a yuzu-forward Shikoku Margarita mixing tequila and mezcal. A curated sake list and Japanese beers round things out, alongside a mocktail menu for the zero-proof crowd.
Dessert closes the meal with Matcha Nameraka pudding and a Sudachi Lime Tart, or diners can head to the Night Caps section for the espresso-and-miso-caramel Yami-Jillo.
Kuza is open 5-10 p.m. Wednesday-Thursday, 5-11 p.m Friday-Saturday, and 5-10 p.m. Sunday.
